Better Than Biscotti
Sweet Infused Biscotti
Biscotti is a great “anytime” treat. Personally, on mornings when I am looking to indulge, dipping these crunchy cookies in tea or coffee hits the spot. You can change the nuts and dried fruit for whatever appeals to you, but I enjoy toasted pecans and coconut (although macadamia and white chocolate chips are another favorite as well). They make a great gift, they last a long time, and they are scrumptious.
Ingredients
2 cups all-purpose flour
2/3 cup white sugar, plus 1?4 cup for sprinkling the biscotti (optional)
1 teaspoon baking powder
1?4 teaspoon kosher salt
2 eggs, lightly beaten, plus one egg white for glazing the biscotti (optional)
2 teaspoons vanilla extract
3 tablespoons, plus 1 teaspoon cannabis-infused oil
1 tablespoon orange juice concentrate
1 tablespoon freshly grated orange zest
1 cup chopped walnuts
1?2 cup dried cranberries
Instructions
- Preheat the oven to 340 degrees Fahrenheit.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate small bowl, whisk together the eggs, vanilla, canna-oil, orange juice concentrate, and orange zest.
- Add the wet ingredients to the dry ingredients and mix just until the flour is moistened.
- Fold in the walnuts and cranberries and gently knead the dough with floured hands until mixed.
- Divide the dough in half and, again using floured hands, pat each half into two 10-by-21?2-inch logs.
- Put each log on a baking sheet and bake until they are golden brown, 20 to 25 minutes, rotating sheets once halfway through baking. Keep the oven on. Transfer the logs to a wire rack and cool them for 10 minutes.
- Transfer the cooled logs to a cutting board and, using a serrated knife, slice them on the diagonal into 1-inch slices.
- Put the biscotti back on the baking sheets. (If you like, brush each with the egg white and sprinkle with sugar.)
- Bake the biscotti until light golden brown, 8 to 10 minutes on each side, or a little longer if you like a crispier biscotti.
- Transfer the biscotti to wire racks to cool completely.
