Every major holiday is associated with many classic dishes that identify seasonal ingredients and make a specific celebration stand out. Easter is all about ham, Fourth of July is about BBQ and Halloween is clearly all about pumpkin (and apples to a lesser degree). Halloween is just around the corner, and here are just a few ways that you can incorporate pumpkin into your morning routine leading up to the holiday (with a bit of cannabis to add more pep into your step).
PUMPKIN SMOOTHIE
Ingredients
1/3 cup canned pumpkin puree
1 banana, frozen
1/4 tablespoon honey
1/2 teaspoon cinnamon
1 cup cannabis-infused milk
1/4 teaspoon vanilla extract
2 teaspoons brown sugar
Instructions
- Blend all ingredients in a blender until smooth. Serve immediately!
PUMPKIN PANCAKES
Ingredients
1 1/4 cups all-purpose flour
2 tablespoons white sugar
2 teaspoons baking powder
1/2 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon nutmeg
1 pinch clove
1 cup milk
1 egg
6 tablespoons canned pumpkin puree
2 tablespoons melted cannabis infused-butter
Instructions
- Whisk the dry ingredients together in a bowl.
- In a different bowl, mix the milk, egg, pumpkin and melted butter until well combined.
- Folder the wet mixture into the dry mixture.
- Pre-heat a pan or griddle at medium heat.
- For one pancake, pour 1/4 cup of batter onto surface.
- Cook pancakes for about 3 minutes per side, or until bubbles begin to form.
- Serve immediately and top with more infused butter and syrup.
PUMPKIN MUFFINS
Ingredients
1 box of spice cake or yellow cake mix
1 (15-ounce) can pumpkin puree
2 tablespoons cannabis-infused butter
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
Instructions
- Preheat oven to 350 degrees F.
- Grease a muffin pan, or line it with muffin foil/paper liners.
- Mix all ingredients in a large bowl until well combined.
- Add equal amounts of batter to each muffin liner.
5. Bake for 20-25 minutes. Check for doneness by inserting a thick skewer, fork or toothpick into muffin. If it comes out clean, then baking is complete.
