Deviled Egg Eyeballs

The addition of a pimento-stuffed green olives and a few strategically placed strips of roasted red pepper turns these deviled eggs into an optical illusion.

The addition of a pimento-stuffed green olives and a few strategically placed strips of roasted red pepper turns these deviled eggs into an optical illusion.

Makes 12. 1 per serving.

6 peeled hard boiled eggs
1.5 grams kief
2 tablespoons mayonnaise
¾ teaspoon Dijon mustard
½ teaspoon Worcestershire sauce
Salt and pepper to taste
12 small pimiento-stuffed green olives
¼ cup roasted red peppers

Cut each egg in half and carefully scoop out the yolk, retaining the whites. Mash yolks together with kief, mayonnaise, mustard, Worcestershire sauce and salt and pepper to make a smooth paste. Carefully spoon yolk mixture back into the reserved egg white halves. Place one well drained pimiento-stuffed olive in the center of each yolk. Slice roasted red pepper strips very thinly and place on yolks to resemble bloodshot eyes.
