These tiny elegant appetizers pack a ton of flavor into a bite sized package. Prepare up to a day ahead and keep refrigerated. Bake just before serving. Makes 16 pieces, 2 per serving.
16 large Medjool dates, pitted
1/8 cup mild goat cheese
1/8 cup cream cheese
1 gram kief
16 toasted walnut or pecan halves
8 slices of bacon halved crosswise
Preheat the oven to 400°F. Mix goat cheese and cream cheese with kief until well combined and mixture is smooth Cut a lengthwise slit in the dates. Stuff each date with about 1/2 teaspoon of the cheese mixture and a toasted walnut or pecan half. Pinch the dates closed. Tightly wrap each date in a piece of bacon and arrange, seam side down, on a wire rack set on a baking sheet. Bake for 10 minutes, use tongs to carefully turn each date, and bake for about 10 minutes more or until bacon is browned and crisp. Serve warm.
