The addition of some creatively placed candies turns a platter full of retro style Whoopee Pies, into a dessert that stares back at you.
Makes 17 filled sandwiches, 1 per Serving

2 cups all-purpose flour

1 cup sugar

¾ cup unsweetened cocoa

1 teaspoon baking soda

¼ teaspoon salt

6 tablespoons Marijuana Butter*

1 cup milk

1 1/2 teaspoons vanilla extract

1 large egg

6 tablespoons butter or margarine

1 (7 oz.) jar marshmallow crème

1 cup confectioners’ sugar
17 large marshmallows
34 red hot cinnamon candies (i.e. Red Hots)

3 thin licorice whip candies

Preheat oven to 350 degrees F. Grease 2 large baking sheets with vegetable shortening or spray with cooking spray. Melt 6 tablespoons Marijuana Butter. In a large bowl, combine flour, sugar, cocoa, baking soda and salt, stir to combine. Stir in melted Marijuana Butter, milk, vanilla extract, and egg, stir with a wooden spoon until everything is well mixed. Drop batter by heaping tablespoons onto the prepared baking sheet, about 2 inches apart. You should have 34 cookies. Bake for about 12 minutes or until a toothpick inserted into the center comes out clean. Use a spatula to transfer to a wire rack to cool completely before filling. Prepare filling by beating 6 tablespoons butter or margarine with an electric mixer until fluffy. Reduce mixer speed and gradually beat in confectioners’ sugar. Beat in marshmallow crème and vanilla until all is well combined and filling is light and fluffy. Reserve about 2 tablespoons filling. Spread about a tablespoon of filling on to the flat side of [1/2] the cookies. Top with remaining cookies. To decorate with candy eyeballs, cut each marshmallow in half horizontally. Use a small a dab of reserved filling to stick 2 marshmallows halves on top of each filled cookie. Use a tiny dab of filling to attach a red “iris” (hot cinnamon candy) onto the marshmallow half. Use two 1 1/2-inch lengths of red licorice whip to make eyebrows. Depending on the placement of the candies and eyebrows, you can achieve a multitude of expressions. Place finished sandwiches in a single layer on a large platter and serve.
