Warm Up with a Bowl of Spicy Infused Sweet Potato Soup

There’s nothing better than a warm bowl of soup on a cold day. Although we’re nearing the end of winter (February always feels like it flies by due to being the shortest month of the year), there’s no better time to try out a new soup recipe. Super healthy and full of heated, smoky goodness, this Spicy Sweet Potato Soup is one of the most delicious meals to keep the cold at bay. It’s easy to make, with only a handful of ingredients, and the caramelized sweet potatoes add a lovely layer of complexity. Topping with croutons you have on hand, or a special collection of homemade infused croutons in an airtight jar, adds the perfect amount of crunch. This soups becomes a wealth of possibility when you consider other toppings for this creamy delight as well—there are plenty of other dry ingredients to mix with this one-of-a-kind meal.

Ingredients

4 large sweet potatoes

2 tablespoons extra virgin olive oil

1 large onion, peeled and sliced

1 large carrot, peeled and sliced

2 garlic cloves, finely chopped

1 teaspoon smoked paprika

1 teaspoon cumin

1/2 teaspoon cayenne

1/2 teaspoon salt

1 cup half-and-half

2 tablespoons canna-butter

2 tablespoons scallions, thin slices

Instructions

Soup

1.  Heat the oven to 400 degrees Fahrenheit. Pierce each potato with a fork multiple times and place on a baking sheet. Roast until tender, about 50-60 minutes.

2.  In a large skillet, heat up oil and saute the onion, carrot, garlic, and spices on medium heat until tender, 15-18 minutes. Add the mixture to a food processor and or blender and puree until smooth, and place back in sauce pan with heat on low.

3.  When the potatoes are done cooking, and slightly cooled, puree them with the canna-butter until smooth.

4.  Add the potato mixture to the saucepan you used to cook vegetables and stir to combine. Warm the soup before serving.

Croutons

5.  The croutons can be infused with cannabis-infused butter if you want a double dose. Sauté bread cubes in a mix of canna butter and olive oil, or just oil or butter without cannabis.

6.  Top the soup with the croutons and scallions.
