Spinach-Prosciutto Salad with Hemp Orange Vinaigrette

1 orange, quartered
2 garlic cloves
Juice from ½ lime
1/3 cup hemp oil
*3 tablespoons cannabis olive oil
2 tablespoons balsamic vinegar
¾ teaspoons freshly ground pepper
Salt and pepper, to taste
10 ounces fresh spinach
4 slices prosciutto
¼ cup pistachio halves
 
Preheat oven to 350 degrees. Put all ingredients except the spinach and prosciutto in a food processor and blend until smooth. Store vinaigrette in refrigerator until ready for use. Place prosciutto on a baking sheet and bake until just crisp, about 8-10 minutes. Let the slices cool, then crumble into bacon-bit-sized pieces. Place spinach in a large bowl. Toss with enough vinaigrette to coat spinach. Add prosciutto and pistachio halves, toss again and serve.
