Sweet pears and tart pomegranates add interest to this mixed green salad. Serves 4.
Dressing:
1/4 cup apple cider vinegar
1/4 cup Cannabis-Infused Olive Oil*
1/8 cup olive oil
1 teaspoon dry mustard powder
1 teaspoon black pepper
1 teaspoon salt
1/4 teaspoon dried tarragon (optional)
Salad:
6 cups mixed salad greens
2 medium Bosc or Barlett pears, peeled, cored and diced
1 cup pomegranate seeds
4 tablespoons chopped toasted pecans
4 tablespoons crumbled blue cheese
Toss together salad greens, diced pears and pomegranate seeds. Whisk together salad dressing ingredients and toss with the salad. Divide among 4 plates. Top each with a tablespoon each of toasted pecans and crumbled blue cheese. Serve immediately on chilled salad plates.
