½ cup honey

2 teaspoons vanilla extract

In a large bowl, blend together butter and honey. Beat in egg, and stir in vanilla extract. In a separate bowl, sift together flour and baking powder. Transfer flour mixture to butter/honey mixture and combine to make a dough. Refrigerate dough for an hour until firm. Roll the dough on a lightly powdered surface to about ¼-inch thickness. Cut into 2-inch circles. Place circles on a foil-lined or nonstick cookie sheet, and bake at 375 degrees for 6 to 8 minutes.
