Leftover Turkey Day Pancakes

up all your favorite leftovers from Thanksgiving in a large bowl . . .

Gather
up all your favorite leftovers from Thanksgiving in a large bowl . . .
-mashed potatoes
-sweet potatoes, mashed up
-green bean casserole, mashed up or blended
-stuffing or your other favorites
– salt and pepper to taste
-2 tablespoons all purpose flour (for thickening)
-4 cups vegetable oil for frying

With all the leftover dishes from Thanksgiving all mashed up in a large bowl,
add two to four tablespoons of flour to make mixture thick. Mix thoroughly.
Turn oven on low, or 200°. Heat ¼ inch of oil in the bottom of a heavy skillet
over medium-high heat. Spoon  three
half-inch thick pancakes into the hot oil, careful not to let them touch. Fry,
turning once, until golden brown. Transfer to a paper towel-lined plate to
drain and keep warm in oven until serving time. Repeat until all the
Thanksgiving mixture is used.
Garnish with little gravy or cranberry sauce.
