Get out for International Picnic Day

[dropcap class=”kp-dropcap”]P[/dropcap]icnics invoke the old pastime of spending time with someone, mainly when no technology or distractions are present. It’s one of those old-fashioned “Put On Your Sunday Clothes” kind of days, where pleasant weather is all the excuse you need  to get out of the house and strut your stuff.

Today, June 18, is International Picnic Day. If you’re inclined to enjoy good weather and good company today, here’s a guide on a few things you can prepare if you plan to get out of the house. But first, it should go without saying, that consuming cannabis in public is widely unacceptable and/or illegal in many cities and states, so be cautious and careful depending on where you live.

Cannabis Infused Strawberry Lemonade

On a warm summer day, nothing beats a fresh glass of lemonade. Makes about 1 1/2 quarts.

Ingredients

1 1/2 cups strawberries, trimmed and halved

2 cups freshly squeezed lemon juice

1 1/2 cup white sugar

3 cups water

Instructions

  1. Blend strawberries with 2 tablespoons of lemon juice until smooth.
  2. In a large pitcher, pour the mixture into a blender, along with the extra lemon juice, sugar and water.
  3. Once sugar is dissolved, test for flavor and add more sugar accordingly.
  4. Serve with ice, and enjoy!

Chips and Dip

Chips are one of the greatest sides of all time. They can be eaten on their own, or transformed with the use of a clever dipping sauce. Try infusing your hummus, salsa, guacamole and even artichoke dip with cannabis to add an extra kick.

Tomato and Avocado Sandwich

The point of picnics is to eat a simple meal outdoors—and nothing is more simple and refreshing than a sandwich. Pre-make your avocado spread ahead of time (and be careful not to become another statistic in the “avocado hand injury” category).

Ingredients

2-3 ripe avocados, mashed

Ample cherry tomatoes, sliced in half

1/4 teaspoon cannabis-infused olive oil

Salt, pepper, paprika, cayenne pepper and fresh lime to taste

Bread of choice, toasted

Hemp seeds (optional)

Instructions

  1. Pre-mash the avocado mixture immediately prior to picnicking. Add desired spices and flavors to taste.
  2. Halve cherry tomatoes, and toss in infused olive oil. Season with salt and pepper.
  3. Once ready to prepare, spread avocado on toast like any spread, top with ample tomatoes,
  4. Sprinkle hemp seeds on top for an extra crunch, if desired.
  5. Finish by adding the second piece of toast to the top. Serve immediately.

Rice Krispies

Ingredients

3 tablespoons cannabis-infused butter

1 package (10 oz, 40 count) marshmallows

6 cups Rice Krispies cereal

Instructions

  1. In a large saucepan melt butter over low heat.
  2. Add marshmallows, and stir until completely melted. Remove from heat.
  3. Add Rice Krispies cereal. Stir until well coated.
  4. Using a buttered spatula or wax paper evenly press mixture into a 13×9 two-inch pan coated with cooking spray.
  5. Let cool, and cut into two-inch squares.
