Chicken and New Potato Casserole

1 large onion, chopped
2/3 pound carrots, sliced
2/3 pound new potatoes, halved
2 medium sweet potatoes, sliced

2/3 pound carrots, sliced

2/3 pound new potatoes, halved

2 medium sweet potatoes, sliced

1 tablespoon dill weed, chopped

3 cloves garlic, crushed

2 pints vegetable stock

¼ cup cannabis olive oil

Preheat oven to 350 degrees. Sauté the onions, carrots and garlic in olive oil over medium-low heat until onions are lightly golden, then transfer to a warm dish. In same pan, sauté the chicken over medium-low heat until lightly golden on both sides. Transfer chicken and vegetables to a large casserole dish. Add vegetable stock and dill weed. Place in oven and bake, uncovered, for 15 minutes. Add sweet potatoes and hemp seeds. Cook 20 to 25 minutes, or until potatoes are tender.
