Corn brightens any meal and is the most loved of all vegetables!
Makes 4 servings.
6 ears of corn (about 3 cups)
2 tablespoons Canna Butter*
Salt and pepper to taste
Remove the husks and silks from the ears of corn. Cut off stem end for a flat base. Hold ear tip end up and cut down. With a sharp knife remove the kernels of corn. One ear of corn yields about 1/2 cup of kernels. Melt the Canna Butter in a skillet over medium heat. Add the corn and sauté 3 minutes. Season to taste with salt and pepper.
